- 1 tbsp tomato puree

- 1 tbsp Shaan Pilau Biryani Masala
- 1/4 tsp turmeric powder
- 1/2 tsp kashmiri red chilli powder
- 1 tsp black pepper powder
- 4 green cardamoms
- 5-6 cloves
- 1 inch stick cinnamon
- 5-6 black peppercorns
- 2 bay leaves
- 8-10 curry leaves fried
- 1 tbsp coriander chopped
- 4 green chillies
- 2 potatoes halved and boiled
- As needed oil for frying
- 1.5 tbsp ghee
- 1/4tsp orange red food colour
- 2 tbsp cornflour
- 2 drops mitha attar
- 1/4cup saffron soaked warm milk
Instructions to make to make Hyderabadi Boneless Chicken 65 Biryani
- Marinate chicken cubes for an hour with 1/4 th tsp salt,turmeric, 1/2 tsp each of ginger garlic paste,lemon juice, orange red food colour and 2 tbsp cornflour. Meanwhile boil 4-5 cups water with little salt, 2 bay leaves, whole garam masalas and 1 tbsp oil. Boil soaked Basmati Rice in it till 80% cooked.Remove from heat and strain. Spread and set aside.Boil halved potatoes and fry.
- Heat oil and fry marinated and cornflour coated chicken cubes in medium-low heat till properly cooked through until crispy and golden brown. Make a paste of onion,curd,ginger garlic and 2 green chillies.Remove excess oil.Add ghee 1 tbsp oil and fry few curry leaves.Add the ground paste,tomato puree,biryani masala,black pepper powder,red chilli powder and salt to taste.Fry the masala and toss chicken cubes and fried potatoes in it till well coated and dry.
- Fry finely sliced onions till crisp and golden brown. Remove excess oil.In 1 tbsp ghee spread a layer of fried chicken masala with potatoes. Top it with a layer of rice.Sprinkle saffron soaked milk, a pinch of orange red food colour and some fried onion.Again some chicken cubes.Then again a layer of rice.Sprinkle 2 tsp ghee, kewra water,mitha attar,pinch of food colour,rest of fried onions,few slit green chillies and chopped coriander. Close the lid tightly.Cook on low flame for 20 minutes.
- Open lid after 10 minutes. Lightly toss and serve delicious chicken 65 biryani with raita in lunch or dinner.
